These apple muffins are the perfect side dish for Shabbos, Yom Tov or just because. They are so simple to make and are always a winner.
I always make sure to have a stock of these in my freezer, and pull them out when I have last minute company.
1 cup sugar
3/4 cup oil
1 tsp vanilla sugar
1 1/4 cup flour
1 tsp baking powder
5 large apples, peeled and diced ( I use an alligator slicer to save time)
1 tsp cinnamon
Blend eggs, sugar, oil and vanilla in a large bowl. Add flour and baking powder and mix well. Add apples and mix until just combined. Spoon into muffin tins and sprinkle with cinnamon.
Bake on 350º for 20 minutes or until golden.
Freeze once they are completely baked, and them warm up uncovered when you’re ready to serve.
