You guys may not know yet, but I’m always looking for shortcuts when it comes to cooking. I don’t know about you, but when I’m cooking and the recipe calls for sautéed onions, I think twice about making it. Do I want to get another pot dirty…… adding 20 minutes to my prep time…. the onions need to be constantly mixed…
So one night when I had a little ”extra” time, I diced two bags of onions and sautéed them. I separated them into small and medium zip lock bags, so that I have a different amounts available when needed. I froze them, and it makes my cooking life so much easier. Now when I need to sauté onions, I just pull a bag out of the freezer and we are good to go.
I’m a big believer in when you’re doing it once, you might as well just triple it.
I also discovered that sautéing them in a 9 X 13 pan in the oven works just as well, minus the pot to wash out afterwards. Preheat the oven to 400º, add oil and diced onions to the pan and bake uncovered for about 45 minutes. Stir every 15 minutes or so.
