This is the perfect supper for when you want to make something special for dinner, but are short on time so you can’t make anything too crazy. All three recipes are easy to make and use simple ingredients that you will have at home.
Onion rings:
2 large onions
2 eggs
Corn flake crumbs (flavored with 1 tsp garlic powder & 1/2 tsp paprika)
Cut onions into circles and separate each layer. Dip into eggs and then coat in the corn flake crumbs.
Spray generously with Pam and place in a single layer on a cookie sheet. Bake on 400 for 15 minutes or until crispy.

Rib steak:
1 tbs olive oil
5 cloves garlic
1 tsp rosemary
1 tbs white wine vinegar
Heat up oil and add garlic. Once sautéed, add the rosemary and vinegar and set aside.
Pour over the steak when your ready to serve.
I grill my steak on a grill pan, for about 7 minutes on each side.
Potatoes:
Cut potato in half and wrap in aluminum foil. Bake on 350 for an hour.
Scrape out the inside of the potato, but leave a little potato attached to the skin so that it doesn’t fall apart. Mash the potatoes and add salt and pepper to taste. I add sautéed onions as well. Put it back into the potato skin and bake uncovered for another 10 minutes.
*Plan ahead
The onions rings can be prepared and frozen raw. When ready to serve, just follow the cooking directions above.
Happy cooking,
Esti
